A common approach to creating accurate time sheets is to keep your time sheet open all day, updating it on a regular basis. No doubt, this is an effective approach.
With One Task List, there is a more effective way:
Use tickets to manage your work as much as possible, regardless of the type of work.
Open the ticket, in edit mode, for whatever you are working on at any given time.
Use auto-populate on your time sheet at the end of the week. This feature will reflect all of your ticket work in the time sheet, with extreme accuracy. Any 'gaps' will be obvious, including the need to adjust any of the entries automatically created by ticket time.
